Higashine, in Yamagata Prefecture, is Japan's leading producer of cherries by volume among all municipalities, and also produces more wheat gluten (fu) than anywhere else in the country. The surrounding area supports extensive fruit cultivation, including apples alongside cherries. Incorporated as a city in 1958, it sits in the central-eastern part of Yamagata Prefecture, close to the mountains.
